Potato And Leek Soup
|Leeks||3 Cup (48 tbs), washed|
|Margarine||1 Tablespoon, reduced|
|Skim milk/Non fat milk||4 Cup (64 tbs)|
|Instant chicken broth||2 Cup (32 tbs)|
|Instant potato flakes||1 1⁄2 Ounce, uncooked|
1.Take a 3 quart microwavable casserole and add in margarine and leeks. Mix well and microwave covered for 5 minutes on high 100%. Stir every 3 minutes until leeks turn translucent.
2.Now, add in the milk, broth mix and microwave uncovered for 4 minutes on medium 50%.
3.Stir in the potato flakes and microwave again for 5 minutes on medium 50%. Stir once every 2 minutes. The soup thickens by this time.
4. Serve hot.
