Quick Vegetable Soup

Ingredients
  Butter margarine 1 1⁄2 Tablespoon
  Butter/Margarine 1 1⁄2 Tablespoon
  Carrot 1
  Carrot 1 , finely chopped
  Onion 1 , finely chopped
  Onion 1
  Parsnip 1 , finely chopped
  Parsnip 1
  Celery 2 , chopped
  Celery stalks 2 , finely chopped
  Plain flour 2 Tablespoon
  Beef stock 1 1⁄2 Liter
  Salt To Taste
  Pepper To Taste
  Parsley 1 Tablespoon, chopped
  Chopped parsley 1 Tablespoon
Directions

MAKING
1. In a shallow dish, add margarine and melt it in the microwave for half a minute
2. Add chopped carrot, onion, celery and parsnip to it, cover and allow to saute for three minutes in the microwave
3. Add flour, stir with a wooden spoon, cover and microwave for another three minutes
4. In a large cassrole, boil water for the stock, add vegetables and cook for ten minutes; season with salt and pepper and stir in parsley

SERVING
5. Serve in individual soup bowls
