Chilled Cantaloupe Soup
|Dry sherry||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Lime juice||1 Tablespoon|
1) Halve the cantaloupe; scoop out seeds as well as the flesh.
2) In blender, place cantaloupe flesh and rest of ingredients.
3) Blend until smooth, several times, if required.
4) Keep in refrigerator, covered, until very cold.
5) Serve the chilled soup as appetizer.
