Zucchini Soup

Ingredients
  Zucchini 2 Cup (32 tbs), finely chopped
  Finely chopped zucchini 2 Cup (32 tbs)
  Shallots 4 , finely chopped
  Garlic 1 Clove (5 gm), crushed
  Dried basil 1⁄2 Teaspoon
  Ground black pepper To Taste
  Water 4 Cup (64 tbs)
  Beef stock cubes 4 , crumbled
  Butter 1 Tablespoon
  Salt 2 Teaspoon
  Parsley 2 Tablespoon
  Grated parmesan cheese 1 Tablespoon
Directions

MAKING
1. In a two litre casserole, mix zucchini, shallots and garlic, cover and microwave for five minutes
2. Add basil, pepper, water and stock cubes, cover and cook for another five minutes
3. In a separate bowl, cream the butter until soft and beat parsley and salt into it; stir this mixture into the hot soup and reheat if need be

SERVING
4. Ladle into separate bowls and sprinkle with parmesan cheese before serving
