Tomato Soup With Sour Cream

Ingredients
  Butter/Margarine 1 1⁄2 Tablespoon
  Onion 1 , finely chopped
  Celery 1 , finely chopped
  Tomatoes 1 1⁄2 Pound, finely chopped
  Plain flour 4 Tablespoon
  Chicken stock cubes 3 , crumbled
  Tomato juice 1 Can (10 oz)
  Salt 1 Teaspoon
  Black pepper To Taste, freshly ground
  Sour cream 1⁄2 Cup (8 tbs)
Directions

MAKING
1. In a two and a half litre casserole, melt margarine in the microwave for half a minute; add chopped onions and celery and microwave for five minutes
2. Add tomatoes and cook for another couple of minutes; add flour and stock cubes to it, stir, add tomato juice, cover and microwave for another five minutes
3. Remove the casserole from the oven, add salt and pepper to it and microwave for another minute; adjust the seasoning

SERVING
4. Serve in individual bowls topped with a swirl of sour cream
