Golden Corn Soup

Ingredients
  Margarine/Butter 2 Tablespoon
  Butter/Margarine 2 Tablespoon
  Onion 1 Medium, finely chopped
  Carrot 1 Cup (16 tbs), chopped
  Butternut pumpkin 2 1⁄2 Cup (40 tbs), chopped
  Chicken stock 2 Cup (32 tbs)
  Sweet corn kernels 1 Can (10 oz), drained
  Dried thyme 1⁄2 Teaspoon
  Parsley 1 Tablespoon, chopped (To Garnish)
  Chopped parsley 2 Tablespoon (To Garnish)
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1. In a two litre microwave casserole, melt margarine in the microwave for half a minute; add onion and microwave it for a couple of minutes
2. Add carrot, pumpkin and half a cup of chicken stock to it, cover and microwave for five minutes
3. Add corn and microwave it for five minutes with the lid on until the vegetables turn tender
4. Add the rest of the stock, cover and microwave for another five minutes till the soup bubbles gradually; add thyme, salt and pepper to taste

SERVING
5. Garnish with chopped parsley before serving
