Iced Parsley Soup

Ingredients
  Margarine 3 Tablespoon
  Onion 1 Medium, peeled and chopped
  Chicken stock 3 Cup (48 tbs)
  Ground pepper 1⁄8 Teaspoon
  Plain non fat yogurt 1 Cup (16 tbs)
  Chopped fresh parsley 1 Cup (16 tbs)
  Toasted slivered almonds 4 Teaspoon
Directions

MAKING
1. Take a 2 quart saucepan, add margarine and heat it.
2. Add chicken stock.
3. Add onions and saute them.
4. Allow the mixture to simmer for 5 minutes.
5. Keep aside and allow to cool a little.
6. Take a food processor or blender, add onion-stock mixture and blend well.
7. Mix yogurt with puree.
8. Add parsley and stir well.
9. Allow the soup to chill in refrigerator till served.

SERVING
10. Garnish with almonds and serve.
