CreamOfLettuce Soup

Ingredients
  Bacon fat 3 Tablespoon
  Scallions 6 , finely chopped
  Crisphead lettuce 1 Medium, shredded
  Curry powder 1 Teaspoon
  Dried mint 1⁄4 Teaspoon
  Chicken bouillon 1 Cup (16 tbs)
  Light cream 1 Cup (16 tbs)
  Hard cooked egg 4
  Chopped chives 1 Tablespoon
Directions

MAKING
1) In a large saucepan heat fat.
2) Stir in scallions and fry till done.
3) Mix lettuce, curry powder, mint, and bouillon.
4) Stir and simmer covered for 4 to 5 minutes till lettuce tender.
5) In a blender puree the soup and add to saucepan with 1 cup light cream.
6) Add seasoning and boil.

SERVING
7) Serve with hard-cooked egg slice and chopped chives on top.
