1)In a saucepan, heat oil.
2) Add onion, pepper and garlic and saute for a minute.
3) Add tomatoes and cook further for atleast 5 minutes.
4)Stir in the bread, salt and water, and simmer for atleast 10 -15 minutes, stirring occasionally.
5)Serve soup hot garnished with thinly sliced green onions or chopped fresh basil.
