Sweet Potato Soup

Ingredients
  Butter/Margarine stick 1 Teaspoon
  Chopped onion 1⁄4 Cup (4 tbs)
  Canned low salt chicken broth 10 1⁄2 Ounce (1 Can)
  Peeled diced sweet potato 3⁄4 Cup (12 tbs)
  Pure maple syrup 2 Teaspoon
  Salt 1⁄8 Teaspoon
  Dried thyme 1⁄8 Teaspoon
  Curry powder 1⁄8 Teaspoon
  Ground nutmeg 1 Dash
  Ground red pepper 1 Dash
  2% reduced fat milk 1⁄3 Cup (5.33 tbs)
  Fresh lime juice 1 Teaspoon
  Dark rum 1 Teaspoon
  Grated lime rind 2 Teaspoon
Directions

MAKING
1. In a medium saucepan, melt butter and onions and allow to saute for a couple of minutes
2. Add broth, sweet potato, salt, thyme,maple syrup, nutmeg, red pepper, salt and curry powder, and bring it to a boil
3. Cover the saucepan, turn the heat down and allow to simmer for twenty minutes till the sweet potato turns tender
4. Turn this sweet potato mixture into the food processor and addlime juice, rum and milk adn process till smooth

SERVING
5. Ladle this soup i9nto individual bowls, sprinkle lemon rind on top and serve
