Mixed Herb Soup
|Butter||2 Ounce (55 Gram)|
|Garlic||1 Clove (5 gm)|
|Wholemeal flour||2 Tablespoon|
|Vegetable stock||2 Pint (1.1 Liter)|
|Mixed greens||1 Bunch (100 gm) (Use Lovage, Parsley, Thyme And Tarragon)|
|Sea salt||To Taste|
|Freshly ground black pepper||To Taste|
1. Chop the onion and celery very finely. Saute in the butter, adding the crushed garlic, and cooking until soft.
2. Stir in the flour and cook for a minute or so, then add the stock, little by little at first, stirring all the time.
3. Chop the herbs finely and add.
4. Simmer for 15 minutes and season according to taste, then serve.
