Red Bean Soup

Ingredients
  Lotus nuts 1 1⁄2 Ounce (50 Gram, Dried Or Tinned)
  Azuki red beans 8 Ounce, dried (250 Gram)
  Orange peel strip 1 (Dried Or Fresh)
  Water 1 Liter (4 Cups)
  Sugar 3⁄4 Cup (12 tbs)
Directions

GETTING READY
1) If dried lotus nuts are to be used, then, soak in hot water for 1 1/2 hours
2) Drain, peel and use a toothpick to push out the bitter central core.
3) If using tinned nuts, drain and discard liquid.

MAKING
4) In warm water, soak the red beans, for 30 minutes.
5) Drain and combine with orange peel, and simmer covered, for 1 hour.
6) Add the lotus nuts and cook for 1 more hour.
7) Add sugar to taste and stir until dissolved.

SERVING
8) Serve warm.
