Cold Cucumber Soup
|Cucumber||1 , chopped|
|Toasted walnuts||1⁄2 Cup (8 tbs)|
|Apple juice||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm), chopped|
|Fresh dill/1 teaspoon dried dill||2 Tablespoon|
1)Mix cucumber, walnuts,apple juice,clove garlic, dill, salt and pepper except yoghurt in a food processor.
2) Pour into a bowl and blend in the yogurt.
3) Refrigerate to chill before serving
4)Serve chilled as an appetizer during the summer.
