Chilled Avocado Soup
|Ripe avocados||4 Large|
|Garlic||2 Clove (10 gm), chopped|
|Chopped onion||2 Tablespoon|
|Extra virgin olive oil||2 Tablespoon|
|Milk||3 Cup (48 tbs), chilled|
|Cream||1⁄2 Cup (8 tbs) (Chilled)|
|Sodium bicarbonate||1 Pinch|
|Freshly ground white pepper||1⁄2 Teaspoon|
|Finely chopped parsley||1 Tablespoon|
MAKING 1)Chop avocados and sprinkle with lime juice to prevent it from discolouring.
2)Make a smooth puree by blening avocados, garlic, onion and oil.
3)Stir it in milk and whisk in cream and seasonings.
4)Refrigerate until well chilled.
5)Serve soup chilled garnished with parsley.
