Bean Soup

Ingredients
  Beans 2 Cup (32 tbs)
  Onion 2 Tablespoon
  Bacon 2 Tablespoon
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Parsley 2 Tablespoon, chopped
  Thyme 1 Teaspoon
  Flour 3 Tablespoon
Directions

GETTING READY
1) In a bowl, soak the beans. This has to be done overnight.

MAKING
2)Drain and transfer the beans into a saucepan. Pour in 6 cups of boiling water into it. Simmer for 2 hours till the beans become soft.
3)As the beans cook, heat some oil in a frying pan.
4)Sauté onions and bacon they turn light brown.
5) Transfer the sautéed onions and bacon to the beans towards the end of the cooking time. Season the soup with salt, pepper, parsley and thyme.
6) Using the back of a spoon, mash the beans. Add in the flour that was mixed with some cold water. Boil for a further 5 minutes and remove from heat.

SERVING
7) Serve hot in soup bowls.
