Matzo Ball Soup

Ingredients
  Stewing hen 1 Pound
  Chicken fat 2 Tablespoon
  Eggs 2 , slightly beaten
  Matzo meal 1⁄2 Cup (8 tbs)
  Salt 1 Tablespoon
  Soup stock 2 Tablespoon
Directions

Early in day cook stewing hen as you would for any other soup.
Have ready when you make the matzo balls.
Mix chicken fat and eggs together.
Add matzo meal and salt.
Blend well.
Add 2 T.of soup stock.
Cover the mixing bowl and place in the refrigerator for 30 minutes or more.
Using a large pot bring salted water to a boil.
Reduce heat and into slowly boiling water drop matzo balls formed from the above mixture.
Cover pot and cook for 40 minutes.
Have soup stock at room temperature and place matzo balls in it, (after having removed them from the water.)
Simmer soup until hot and serve. (Mixture should yield about 10 matzo balls).
