Smoked Chicken and Black Bean Soup
|Smoked chicken||1 (Whole One)|
|Olive oil||1 Tablespoon|
|Onion||1 , diced|
|Chopped garlic||1 Tablespoon|
|Green bell pepper||1 , seeded and diced|
|Dried oregano||1⁄2 Tablespoon|
|Canned diced tomatoes||2 Cup (32 tbs)|
|Half and half||1 1⁄2 Quart|
|Black beans with liquid||72 Ounce (6 Cans Of 12 Ounce Each)|
|Water||2 Cup (32 tbs)|
|Chicken bouillon cubes||5|
|Cilantro||1⁄2 Bunch (50 gm), chopped (Plus 8 Sprigs)|
|Liquid smoke flavoring||1 Tablespoon|
|Tabasco||1 Tablespoon (Or To Taste)|
1)Cut chicken into pieces of desired size.
2)In a large soup pot, heat oil and stir fry garlic, onion and bell pepper.
3)Now add in chicken and oregano. Continue to stir fry.
4)Add in tomato, half and half, water, beans with liquid, chicken buillon cubes, liquid smoke, cilantro and Tabasco.
4)Simmer over reduced heat for 35 to 45 minutes. Remember to stir continuously.
5)Season according to taste with salt and pepper.
6)Decorate with cilantro sprigs and serve with tortilla chips.
