Chilled Currij Soup
|White onion||1 Large|
|Curry powder||3 Tablespoon|
|Chicken stock/Water and chicken stock cubes||1 1⁄4 Liter|
|Lemon juice||1 Tablespoon|
|Mango chutney||1 Tablespoon (Indian)|
Finely chop onion.
Peel, core and finely chop apple.
Peel and slice banana.
Saute onion and apple in butter in a large covered saucepan for 5 minutes, until soft and golden.
Add banana and cook gently for 5 minutes, stirring with a wooden spoon.
Stir in curry powder and cook for 1 minute, then stir in chicken stock.
Shell cardamom pods, crush the black seeds and add to soup with lemon juice and chutney.
Simmer 20 minutes.
Add salt to taste.
Stir in more curry powder for a hotter soup.
Chill thoroughly before serving.
