|Dried mixed herbs||1⁄2 Teaspoon|
|Beef stock/Canned consomme / water and beef stock cubes||1 1⁄4 Liter|
|Tomatoes||500 Gram, skinned and chopped|
Melt butter in a large saucepan, add celery, onion, carrot and garlic and saute, covered, over a moderate heat, for 5 minutes.
Stir in flour.
Add mixed herbs, peppercorns and bay leaf, cover and cook gently for a further 5 minutes.
Add stock, tomatoes and cloves.
Cover and simmer gently for 1 hour.
Add salt and pepper to taste.
