Cock A Leekie Soup

Ingredients
  Leeks 12
  Butter 1 Ounce
  Celery stalks 2 , chopped
  Carrot 1 , chopped
  Chicken broth 1 1⁄2 Quart
  Cooked chicken 1 Cup (16 tbs), diced
  Egg yolk 1
  Salt To Taste
  Pepper To Taste
Directions

Wash and trim leeks.
Cut into 1/2-inch-long pieces.
Discard roots and tops.
Fry in butter with celery and carrot.
When brown, add 1 quart broth and chicken.
Cover and simmer for 2 hours.
Salt, pepper, and stir in egg yolk which has been blended with remaining broth.
Heat thoroughly.
