Sopa De Quimgomba South American Vegetable Soup

Ingredients
  Butter 45 Milliliter
  Onion 1 , diced
  Celery stalks 2 , diced
  Carrots 2 , diced
  Flour 45 Milliliter
  Okra 500 Gram, sliced
  Vegetable stock 1 Liter
  Diced tomatoes 500 Gram, peeled
  Salt 5 Milliliter
  Black pepper 3 Milliliter
Directions

In a large sauce pan heat the butter, add the onion, celery and carrots, saute until tender.
Sprinkle with flour and cook for 2 minutes.
Add okra and vegetable stock, simmer for 30 minutes.
Add the tomato and seasonings, continue to simmer for 15 minutes.
Serve very hot.
