Leek Soup With Noodles

Ingredients
  Leeks 7 Medium, trimmed
  Butter 2 Tablespoon
  Beef stock 4 Cup (64 tbs)
  Medium noodles 1 Cup (16 tbs)
  Milk 1 1⁄2 Cup (24 tbs)
  Grated cheese 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Slice leeks lengthwise; cut into thin slices.
Cook leeks, covered, in butter in saucepan over low heat for 10 minutes, stirring occasionally.
Stir in stock.
Bring to a boil; reduce heat.
Simmer for 20 minutes, stirring occasionally.
Add noodles; mix well.
Cook until noodles are tender, stirring occasionally.
Stir in enough milk to make desired consistency.
Cook until heated through.
Season with salt and pepper.
Ladle into soup bowls; sprinkle with grated cheese.
