|Maggi seasoning||1 Teaspoon|
|Flour||1⁄2 Cup (8 tbs)|
|Light cream||1 Cup (16 tbs)|
|Sherry||1⁄4 Cup (4 tbs)|
Boil and drain potatoes, reserving liquid.
Mash potatoes, add flour and stir until well blended, adding salt, pepper and oregano.
Slowly add the potato water, milk, cream, chopped onion which has been sauteed in bacon drippings.
Add a generous dash of Maggi's seasoning and heat.
Just before serving add 1/4 c. sherry.
