Creamy Onion Soup
|Whipping cream/1 beaten egg and 1 teaspoon grated parmesan||1 Tablespoon|
|Nutmeg/1 beaten egg and 1 teaspoon grated parmesan||1 Teaspoon|
Add onions and saute until transparent.
Add this to 1 pint of water.
Add pepper and salt.
Boil for 15 minutes.
Add 2 boiled and well-mashed potatoes, stirring in smoothly.
Add second pint of boiling water and let simmer for a few minutes.
Put a piece of toasted bread in the bottom of each soup cup.
Pour soup over this and serve hot.
Garnish with minced parsley.
Serves 6 to 8.
For special guests add 1 tablespoon whipped cream and a dash of nutmeg or a beaten egg and 1 tea spoon grated Parmesan cheese, just before serving.
