Black Bean Soup
|Cooked black beans||30 Ounce, drained (Two 15 Ounce Cans)|
|Bacon strip||10 , diced 1/4 inch|
|Butter||1⁄4 Cup (4 tbs)|
|Garlic||6 Clove (30 gm), minced|
|White onion||1⁄2 , diced|
|Black pepper||To Taste|
|Powdered chicken stock||To Taste|
|Tortilla chips||5 Cup (80 tbs)|
|Grated cheddar cheese||4 Cup (64 tbs)|
|Sour cream||1 Cup (16 tbs)|
|Avocados||2 1⁄2 , pitted, peeled, and sliced|
|Cilantro sprigs||1 Cup (16 tbs), chopped|
1)In a food processor, make bean puree. Add water to adjust consistency.
2)Saute together, bean puree, butter, garlic, onion and bacon.
3)Season with pepper and add in powdered chicken stock.
4)Serve in bowls, with tortilla chips and garnished with cheese, sour cream, avocado slice and cilantro.
