New Zealand Fish Soup
|Onion||1 Large, chopped|
|Garlic||3 Clove (15 gm), finely chopped|
|Olive oil||2 Tablespoon|
|Chopped fresh tomatoes||2 Cup (32 tbs)|
|Canned chicken broth||28 Ounce (2 Cans, 14 Ounce Each)|
|White fish||1 Pound, cut into 1 inch pieces|
|Chopped spinach||3 Cup (48 tbs)|
|Kiwifruit||3 , peeled, chopped|
|Chopped fresh basil||1⁄2 Cup (8 tbs)|
Saute onion and garlic in olive oil in skillet until soft.
Stir in tomatoes and chicken broth.
Simmer for 10 minutes, stirring occasionally.
Add fish and spinach; mix well.
Simmer for 5 minutes or until fish flakes easily, stirring occasionally.
Stir in kiwifruit and basil just before serving.
