Minestra Soup

Team up this appetizing Minestra Soup with pasta or serve it as is. It is filling as well as tasty.
Ingredients
  Salt To Taste
  Pepper To Taste
  Onion 1 Medium, grated
  Garlic 1 Clove (5 gm), minced
  Celery 1 Cup (16 tbs), diced
  Potatoes 1 Cup (16 tbs), diced
  Carrots 3⁄4 Cup (12 tbs), diced
  Tomatoes 2
  Parsley 1 Teaspoon, finely chopped
  Green pepper/Red pepper 1⁄2 Teaspoon, minced
  Cabbage 1 Cup (16 tbs), finely shredded
  Soaked haricot beans 4 Ounce
  Green peas 2 Ounce, soaked
  Grated cheese 2 Ounce
  Boiling water 2 Quart
  Oil 2 Tablespoon
For parsley crackers
  Fresh butter 2 Tablespoon, beaten until fluffy
  Finely chopped parsley 2 Tablespoon

Directions

MAKING
1. In a saucepan, heat oil.
2. Add onions and garlic and cook over a medium flame for 5 minutes.
3. Add the remaining fresh vegetables except the parsley and cook for a further five minutes.
4. Add boiling water, soaked beans and peas.
5. Cook over a medium flame.
6. Season to taste. Cook until the beans turn soft for about 2-3 hours.

SERVING
7. Serve Minestra Soup topped with parsley and grated cheese. You can even serve with Parsley crackers.
To prepare parsley crackers, beat 2 tablespoons fresh butter till it becomes fluffy. Add two tablespoons finely chopped parsley. Spread on cracker biscuits and grill it in the oven until the surface bubbles and colours.
