WHOLE BARLEY SOUP

This Whole Barley Soup is with the gentle surprise of carrot, onion, parsley and mint flavors. Take a sip of Whole Barley Soup to lessen your calorie counts!
Ingredients
  Barley 1 Cup (16 tbs)
  Milk 1 Cup (16 tbs)
  White stock 2 Pint
  Butter 1 Ounce
  Carrot 1 , diced
  Turnip 1 , diced
  Onion 1 , sliced
  Parsley 1 Tablespoon (For garnishing)
  Mint 1 Teaspoon
Directions

MAKING
1. In a pan, take barley.
2. Add white stock. Cover with lid and let it simmer gently for 1 ½ hours.
3. Add diced vegetables and onion. Cook for a further 20 minutes.
4. Strain through a sieve and return to pan.
5. Add milk and butter and stir well. Reheat.

SERVING
6. Serve Whole Barley Soup in hot tureen topped with finely chopped parsley. Season if desired.
