WHITE SOUP STOCK

This White Soup Stock is made with a range of vegetable trimmings and tastes awesome. Use this White Soup Stock as the main ingredient in many vegan dishes or side dishes.
Ingredients
  Leek 1
  Celery/Celeriac 1
  Cauliflower 1
  Onion 1
  Potato 1
  Turnip/Kohl rabi 1
  Mushroom/Stalk 1
  Water 50 Milliliter
  Peppercorns To Taste
  Cloves 1 Teaspoon
  Garlic 1 Clove (5 gm), crushed
  Bouquet garni 1 Bunch (100 gm)
  Salt 2 Teaspoon
Directions

MAKING
1. Wash all the vegetables. Grate or shred it.
2. In a large saucepan, take vegetables.
3. Add water and salt. The proportion of water and vegetables is 1 pound vegetables equals to 1 quart water.
4. Heat it.
5. Add peppercorns, cloves, garlic and Bouquet garni. Let it simmer for 30 minutes.
6. Press well and stir. Let it simmer for a further 5 minutes.
7. Strain and use.

SERVING
8. Use White Stock Soup to prepare further dishes like soups and many vegetarian dishes.
