Country Style Soup

Ingredients
  Potatoes 4
  Leeks/3 onions / 1 cup chives 2
  Hot water/Consomme 1 Quart
  Butter 3 Tablespoon
  Salt 1 Teaspoon
  Fresh parsley 2 Tablespoon
  Milk/Light cream 1 Cup (16 tbs)
  Small croutons 1⁄2 Cup (8 tbs), browned in butter
Directions

GETTING READY
1) Peel the potatoes and dice.
2) Thoroughly wash leeks and make thin slices of green and white parts. Instead of leeks, onions or chives can also be used in same manner.

MAKING
3) In a saucepan, add butter to melt over high heat.
4) Add leek or onion or chives to sauté for a while.
5) Reduce heat to low and cover the pan with a lid. Allow simmering for 10 minutes.
6) Next add water or consommé and potatoes.
7) Cover with a lid and let it simmer for another 20 minutes, sieve through a strainer.

FINALIZING
8) When the soup is ready, add milk.

SERVING
9) Garnish the soup with fresh parsley and butter-browned croutons to serve.
