Cream Of Broccoli and Cauliflower Soup
|Frozen chopped broccoli||10 Ounce (1 Package)|
|Frozen cauliflower||10 Ounce (1 Package)|
|Shredded potato||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Chopped onion||2 Tablespoon|
|Low sodium instant chicken bouillon granules||2 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
|Skim milk||3 Cup (48 tbs)|
In 2-quart casserole, combine all ingredients, except milk.
Microwave at High for 15 to 21 minutes, or until vegetables are tender, stirring 2 or 3 times.
Let stand, covered, for 5 minutes.
Process half the vegetables in food processor or blender bowl until pureed.
Repeat with remaining vegetables.
Return to casserole.
Blend in milk.
Microwave, uncovered, at High for 7 to 13 minutes, or until heated through, stirring once or twice.
