Split Pea and Ham Soup
|Dried green split peas||1 Pound, sorted, drained, rinsed|
|Hot water||6 Cup (96 tbs)|
|Diced potato||1 Cup (16 tbs) (1/4 Inch Cubes)|
|Thinly sliced carrot||1⁄2 Cup (8 tbs)|
|Chopped low fat boiled ham||2 Ounce (1/2 Cup)|
|Low sodium instant chicken bouillon granules||2 Teaspoon|
|Dried thyme leaves||1 Teaspoon|
In 5-quart casserole, combine all ingredients.
Microwave at High for 10 minutes.
Reduce power to 50% (Medium).
Microwave for 30 minutes.
Stir and re-cover.
Microwave at 50% (Medium) for 30 to 45 minutes longer, or until peas are tender.
Let stand, covered, for 10 to 15 minutes.
Remove bay leaf and peppercorns before serving.
