Spicy Carrot Soup

Ingredients
  Extra virgin olive oil 2 Tablespoon
  Onions 2 , chopped
  Ground ginger 1 1⁄2 Teaspoon
  Garlic 3 Clove (15 gm), crushed
  Coriander seeds 3 Teaspoon
  White mustard seeds 1 Teaspoon
  Curry powder 1 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Carrots 1 Kilogram, sliced
  Chicken stock 1 1⁄2 Liter
  Lime juice 1 Tablespoon
Directions

Heat a large pan over a medium-high heat and add the oil.
Add the onions and cook for 5 minutes, stirring occasionally.
Add the ginger, garlic and spices; stir for a further 2 minutes or until fragrant.
Add the carrots and stock and bring to the boil.
Reduce the heat and simmer for 30 minutes or until the carrots are soft.
Take off the heat; carefully puree the soup using a hand-held blender.
Add more liquid if it is too thick.
Stir through the lime juice and salt to taste.
