Pea Soup

Ingredients
  Peas 1 1⁄2 Pound (including pods)
  Ham stock/Water 1 1⁄2 Pint
  Onion 1 Small
  Seasoning To Taste
  Mint 1 Teaspoon (Leveled)
  Sugar 1 Pinch
  Butter 1 Tablespoon (1 knob)
  Cooked peas/Chopped mint / croutons 1 Tablespoon (for garnish)
Directions

Wash pods and shell.
Put the pods and peas into the saucepan with stock or water, the onion if used, seasoning, mint and simmer until tender.
Rub through a sieve; this must be done very vigorously, so only the skins of the pods are left.
Return to the pan, reheat, adding a little sugar to taste and a good knob of butter.
Serve garnished with a few freshly cooked peas or chopped mint or croutons.
