|Ham stock/Water||1 1⁄2 Pint|
|Mint||1 Teaspoon (Leveled)|
|Butter||1 Tablespoon (1 knob)|
|Cooked peas/Chopped mint / croutons||1 Tablespoon (for garnish)|
Wash pods and shell.
Put the pods and peas into the saucepan with stock or water, the onion if used, seasoning, mint and simmer until tender.
Rub through a sieve; this must be done very vigorously, so only the skins of the pods are left.
Return to the pan, reheat, adding a little sugar to taste and a good knob of butter.
Serve garnished with a few freshly cooked peas or chopped mint or croutons.
