Sour Cherry Soup
|Sour cherries||1 Pound (500 gram)|
|Cold water||3 Pint (1.8 liter / 7 1/2 cups)|
|Sugar||8 Ounce (250 gram / 1 1/7 cups)|
|Egg||1 , beaten|
|Lemon juice||1 Tablespoon|
|Sour cream||1⁄4 Pint (150 milliliter / 2/3 cup)|
Combine cherries, water, sugar, cinnamon, and cloves in a large saucepan.
Bring slowly to the boil, and allow to simmer until soft, 30-40 min.
Then set aside to cool.
Combine egg and sugar in a large mixing bowl, beating well.
Add sour cream, and mix well.
Slowly add the cherry compote to this mixture, then lemon juice to taste.
Pour into bowls, and serve chilled. (Try also with plums, apples, pears, or rhubarb.)
