Quick Cheese Soup
|Onions||2 Small, thinly sliced|
|Butter||1 1⁄2 Ounce|
|Plain flour||1 1⁄2 Ounce|
|White stock/Water||1⁄2 Pint|
|Salt||1⁄2 Teaspoon (Leveled)|
|Cayenne pepper||1 Pinch|
|Grated nutmeg||1 Pinch|
|Cheddar cheese||6 Ounce, diced|
|Crisp toast/Croutons||1⁄2 Cup (8 tbs) (To Garnish)|
Cook the onions in the butter for a few minutes, without browning.
Add the flour and stir over a low heat for a further minute.
Add the milk and stock or water gradually, and stir until boiling.
Season, and simmer gently for 5 minutes.
Mix in the cheese and reheat without boiling until it has melted.
Serve hot with crisp toast or croutons.
