Winter Vegetable Soup

Ingredients
  Butter/Margarine 3 Ounce (90 Gram)
  Onions 2 , chopped
  Carrots 4 , chopped
  Celery stick 3 , sliced
  Turnips 2 , chopped
  Jerusalem artichokes 8 Ounce, cut into strips (250 Gram)
  Haricot beans 4 Ounce, soaked in water overnight and drained (125 Gram)
  Stock/Water 1 Cup (16 tbs)
  Bouquet garni 1
  Seasonings To Taste
  Cabbage 1⁄2 , shredded
  Chopped parsley 1 Tablespoon
  Grated cheese 1 Cup (16 tbs)
Directions

Melt butter in a large saucepan.
Saute onions until tender.
Add carrots, celery, turnips and artichokes.
Cook, stirring, for 10 minutes.
Add the beans, enough stock to cover, bouquet garni and seasonings.
Simmer, covered, for 1 hour.
Stir in cabbage.
Simmer for a further 30 minutes.
Sprinkle with parsley and cheese.
