Chilled Blueberry Soup
|Unsweetened frozen blueberries||1 1⁄2 Cup (24 tbs), thawed|
|Unsweetened apple juice||1 Cup (16 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
Blend the apple juice, blueberries, and water in a blender until the blueberries are pureed.
Strain and refrigerate covered for one hour.
Strain the juices and allow any sediment to settle to the bottom.
Skim the top so a clear product will result.
Serve in chilled bouillon cups, garnished with a lemon slice, or float several whole berries on top.
