Delta Cabbage Soup
|Chicken broth||3 Cup (48 tbs)|
|Water||3 Cup (48 tbs)|
|Shredded carrots||1⁄2 Cup (8 tbs)|
|Finely chopped celery||1⁄2 Cup (8 tbs)|
|Potato||1 Medium, peeled and diced|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped peeled fresh tomatoes||2 Cup (32 tbs)|
|Salt||2 1⁄2 Teaspoon (Or To Taste)|
|Shredded cabbage||3 Cup (48 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Granulated sugar||1 Tablespoon|
In a large soup kettle, combine broth, water, carrots, celery, potato, onion, tomatoes, salt, bay leaf and peppercorns.
Simmer, covered, for 1 hour, stirring occasionally.
Add cabbage; simmer 10 minutes.
Stir in lemon juice and sugar; cook about 1 minute, or until heated through.
