Quick, Easy, Healthy Winter Vegetable Soup is never boring. Patrick Drake shows us how to make Quick, Easy, Healthy Winter Vegetable Soup that is delicious too. All you need is a little effort and you can have a healthy soup for yourself. There couldn't have been a better healthy dinner recipe than this.
Ingredients
  Cut vegetables 10 Ounce (1 Package, Carrot And Sweet Potatoes)
  Olive oil 1 Teaspoon
  Onion 1 , chopped
  Garlic 2 Clove (10 gm), chopped
  Chicken stock cube/Vegetable stock cube 1
Directions

Put a pot on the stove and put some olive oil into it.
Add chopped onion and garlic in the pot. Sizzle them until the onions are translucent. It will take about 5 minutes.
Add in the contents of the cut vegetables to the pot and soften them as well. It will take about 5 minutes.
Add a little salt and freshly ground pepper.
Add a cube of chicken stock or vegetable stock to the pot and add 1/2 liter water.
Give it a little stir and let it simmer for 10-15 minutes until the vegetables soften up.
Pour the soup mixture in a blender and whisk.
Add a little coriander and whisk, not too much.
Pour in a plate and serve.
