Summer Soup

Ingredients
  Celery 1 Cup (16 tbs), chop
  Olive oil 3 Tablespoon
  Tomato 1 , chop
  Onion 1 , chop
  Poblano pepper 1 , chop
  Red bell pepper 1 , chop
  Tomato juice 1 Cup (16 tbs)
  Red wine vinegar 1⁄2 Cup (8 tbs)
  Salt and pepper To Taste
  Cilantro 1 Teaspoon
  Chiffonade basil 1 Tablespoon
Directions

MAKING
1. Chop all the vegetables roughly and add to a blender.
2. Add in red wine vinegar and tomato juice and blend well.
3. Adjust salt and pepper.
4. Add in the olive oil and mix well together.

SERVING
5. Pour into a glass and garnish with cilantro and chiffonade basil and serve with a good wine.
