Hearty Fish Soup

Ingredients
  Olive oil 2 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Fish stock 850 Milliliter (Homemade / Made With Low Salt Stock Cubes)
  Halibut 225 Gram, roughly chopped
  Cod 225 Gram, roughly chopped
  Swordfish 225 Gram, roughly chopped
  Scallops 8 Small
  Tomatoes 6 Medium, quartered
  Tomato paste 1 Tablespoon
  Fresh chives 1⁄4 Cup (4 tbs), chopped (1 Handful)
  Spring onions 4 , sliced
Directions

Heat the oil in a large pan on a medium heat, throw in the garlic and turn for 30 seconds.
Add the stock, followed by all the fish, the tomatoes and tomato paste and boil for 5-8 minutes.
It's that simple! Serve garnished with chopped chives and sliced spring onions.
