Peach Melon Soup With Fresh Mint
|Ripe peaches||4 Large, peeled and sliced (Or 6 Medium)|
|Cantaloupe||1 Small, chunked to make about 4 cups loosely packed|
|Lime juice||2 Tablespoon (Juice Of 1 Lime)|
|Mint leaves||12 , finely minced|
|Mint sprigs||3 (For Garnishing)|
In a food processor or a blender in batches, puree the sliced peaches and cantaloupe chunks with the lime juice.
Stir in the minced mint.
Chill several hours to develop the flavor.
Serve in glass bowls; garnish each portion with mint sprigs.
