Cut cauliflower into florets and wash well.
Place cauliflower, onion and stock in a pan over high heat and boil for 5-7 minutes till tender.
Transfer soup to a blender, add remaining ingredients and blend till smooth.
Return soup to pan and heat through.
Ladle hot soup into soup bowls and serve immediately.
