Cool Curried Chicken Soup
|Onion||1 Medium, sliced|
|Apples||2 , cored, peeled, and sliced|
|All purpose flour||1 Teaspoon|
|Curry powder||1 Teaspoon (Or More To Taste)|
|Chicken bouillon||2 Cup (32 tbs)|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Diced cooked white chicken meat||1⁄2 Cup (8 tbs)|
|Light cream||1 Cup (16 tbs)|
Cook onion and apples in melted butter until soft.
Mix flour with curry; add to first mixture and cook slowly, stirring often, for about 5 minutes.
Season with salt, pepper, and a dash of cayenne.
Add bouillon and wine and cook slowly for 10 minutes, stirring constantly.
Rub entire mixture through a fine sieve, cool, and chill in refrigerator.
At serving time add diced chicken and well-chilled cream.
Serve very cold.
