Healthy Zucchini Soup
|Diced zucchini||4 Cup (64 tbs)|
|Onion||4 Ounce, diced|
|Instant chicken broth and seasoning mix||3 Ounce (3 Packets, 1 Ounce Each)|
|Water||2 Cup (32 tbs)|
|Evaporated skimmed milk||1 Cup (16 tbs)|
|Worcestershire sauce||1 Teaspoon|
|White pepper||To Taste|
In a large saucepan combine zucchini, onion, broth mix and bay leaf.
Cook for 10 minutes.
Bring to boil.
Simmer 10 minutes.
Remove from heat.
Discard bay leaf.
Place in blender container; process until smooth.
Return mixture to saucepan.
Bring to a boil.
Add milk, Worcestershire and nutmeg.
Season to taste.
Heat thoroughly but DO NOT BOIL.
