Julia S Sausage Vegetable Soup
|Water/Vegetable cooking liquid / stock / broth||8 Cup (128 tbs)|
|Sliced polish sausage/Other sausage||1⁄2 Pound, smoked|
|Sliced carrots||1 Cup (16 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Diced potatoes||1 Cup (16 tbs)|
|Thinly sliced cabbage||3 Cup (48 tbs)|
In a large soup kettle or Dutch oven, bring water, sausage, carrots, onion, garlic, marjoram, thyme, pepper, and bay leaf to the boiling point.
Reduce heat and simmer, covered, 30 minutes.
Add potatoes and cabbage and simmer, covered, until vegetables are tender, about 30 minutes.
Taste and correct seasonings.
