Herbed Chicken Soup
|Chicken||1 Pound, stewing|
|Water||4 Cup (64 tbs)|
|Onion||1⁄2 Cup (8 tbs), finley chopped|
|Celery||1⁄2 Cup (8 tbs), finley chopped|
|Carrot||2 Cup (32 tbs), thinly sliced|
|Parsley||1⁄3 Cup (5.33 tbs)|
Combine all ingredients in a 3-quart casserole.
Cover and microwave on high for 15 minutes, stirring after 7 minutes.
Cook on low 25 to 30 minutes.
Remove chicken; cool.
Cut meat from bones and cut into small pieces.
Return.meat to stock.
Cover and microwave on low 5 minutes.
Let stand, covered, 5 minutes.
