Cream of Broccoli Soup
|Butter||2 Tablespoon (1/4 Stick)|
|Onion||1 Medium, chopped|
|Freshly ground pepper||1⁄2 Teaspoon|
|Canned chicken broth||14 1⁄2 Ounce (1 Can)|
|Frozen chopped broccoli||10 Ounce, thawed and well drained (1 Package)|
|Milk||2 Cup (32 tbs)|
|Grated parmesan cheese||2 Tablespoon (For Garnish)|
Melt butter in large saucepan over medium heat.
Add onion and saute until light golden, about 10 minutes.
Blend in flour, salt and pepper and stir constantly about 2 minutes.
Gradually add broth, then broccoli and bring to boil, stirring frequently .
Cover and simmer until broccoli is tender .
Puree in batches in blender or processor.
Return to saucepan, add milk and bring to simmer, stirring occasionally .
Ladle into bowls and sprinkle with Parmesan.
Run under preheated broiler until cheese is browned.
