Easy Cream of Asparagus Soup
|Water||1⁄2 Cup (8 tbs)|
|Uncooked instant rice||1⁄2 Cup (8 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped celery||1⁄4 Cup (4 tbs)|
|Frozen asparagus cuts||10 Ounce, Defrosted (1 Package)|
|Instant chicken bouillon granules||1 Teaspoon|
|Skim milk||1 1⁄2 Cup (24 tbs)|
Microwave water in small bowl at High 1 1/2 to 2 1/2 minutes, or until boiling.
Let stand, covered, 5 minutes, or until water is absorbed.
In 2-qt casserole combine onion, celery and asparagus.
Microwave at High 4 to 6 minutes, or until tender, stirring twice.
Mash asparagus mixture with fork.
Stir in flour, seasonings, rice and milk.
Microwave at High 7 to 8 minutes, or until thickened.
Sprinkle with paprika.
